This particular wine derives from a native vine of ancient cultivation, the Pelaverga Piccolo di Verduno. A precious and rare wine, it gives rise to one of the smallest DOCs in Italy. Already appearing in the 1400s but cultivated together with Nebbiolo and Barbera, it is only since the 1970s that some vine-growers, including San Biagio, have really understood its potential and have begun to cultivate it in purity to obtain a wine with a delicate taste and great balance.
Harvesting takes place at the end of September in an area that is very exposed to the sun. Refinement takes place in steel barrels for about 3 months, followed by 4 months of refinement in bottles.
The colour of this excellent wine is a more or less intense ruby red, with cherry highlights.
The nose is lively, intense and fragrant in which a spicy note stands out - cinnamon and black pepper - accompanied by the fruity note of morello cherry. Equally important in defining its bouquet are the floral aromas - rose and violet - and a slight herbaceous vein.
The taste, on the other hand, is dry, fresh and persistent: the sensations discovered on the nose are recognisable, particularly the spices.
It goes very well with traditional sauces but also with cured meats and mature cheeses.
