Verduno Pelaverga derives from a native vine of ancient cultivation, the Pelaverga Piccolo di Verduno. A precious and rare wine, it gives rise to one of the smallest DOCs in Italy. First appearing in the 1400s, it was originally cultivated together with Nebbiolo and Barbera. It is only since the 1970s that some vine-growers, including San Biagio, have really understood Pelaverga's potential. They began to cultivate it on its own to obtain a wine with a delicate taste and great balance.
Harvesting takes place at the end of September in an area that is very exposed to the sun. Refinement takes place in steel tanks for about 3 months, followed by 4 months in the bottle.
The colour of this excellent Verduno Pelaverga is ruby red, with cherry-colored reflections.
The nose is lively, intense, and fragrant in which a spicy note stands out - cinnamon and black pepper - accompanied by the fruity note of morello cherry. Equally important in defining its bouquet are the floral aromas - rose and violet - and a slight herbaceous vein.
The taste, on the other hand, is dry, fresh, and persistent: the sensations discovered on the nose are recognisable, particularly the hint of spice.
It pairs very well with traditional tomato-based pasta sauces but also with cured meats and mature cheeses.
