This Veglia Alps pancetta follows a local artisan recipe of a charming valley at the foot of the Alpe Devero, in northern Piedmont. Pancetta is a typical Italian cured meat that comes from the stomach of the pig, meaning it has a bit higher fat content. This particular Veglia Alps pancetta has been cured with various spices but the but peppery seasoning stands out the strongest. Black pepper is added to the entire surface, giving this cured meat an intense and unique flavor!
This pancetta is produced by Casa Walser, salumi producers from the Walser community. The Walser community is a group of Piedmontese with German heritage who live among the valleys of Piedmont's most northern Alps. They continue to sure salumi in the traditional methods passed down to them.
Pair this pancetta with some aged cheese to balance the fatty texture and it makes the perfect Piedmontese Alpine aperitif!
