The symbol of the Piedmontese dairy tradition, tometta, comes together with the flavor of local truffle to create Paltufo! Small and delicious, tometta cheese is made from whole cow's milk, and is aged from 60 to 90 days. This cheese is much like a Gorgonzola with an extra twist of flavor.
