The cheese was born on the slopes of Monte Rosa in an area suited to the most famous blue-veined Gorgonzola Dop.
This is a variation on the theme, following the Novara recipe of the classic blue cheese.
The delicacy of fresh cow’s milk makes it an excellent cheese for all occasions.
