Gorgonzola DOP extra sweet – 200gr
The sweet Gorgonzola of Palzola has a characteristic of creaminess that stands out in the DOP panorama. What distinguishes this product is the ability to maintain this feature for several days. In addition, its cream is pleasantly mixed up with a delicate and well-melted marbling in the mass. Aged for a period of 60 to 70 days in the old owned farmhouses, real aging cellars coated in cotto are able to maintain the values of humidity and temperature in the cheese. A heritage dictated by the history of the Paltrinieri family.
Serving Suggestions: pasta, risotto.
Taste: soft, less strong than Gorgonzola Piccante, with robust traces of penicillin
Aspect and texture: soft, yellow paste with bluish-green marbling. The rind is light reddish and is usually protected by tin foil
Milk: full fat, pasteurized, cow’s milk
Ripening: at least 60 days
Production Period: throughout the year
Spicy Gorgonzola DOP Extra Riserva – 200gr
The natural Gorgonzola of Palzola is one of the most significant products of the company and one of the most sought after by cheese lovers of the world. The cheese wheel is seasoned for 70 days and during this period the marbling spreads delicately along the whole surface of the compact dough. It’s more accentuated towards the center with a typical rather dark green color. It remains however creamy in the pure style of the Paltrinieri family. It is also called spicy Gorgonzola.
Serving Suggestions: Risotto, Pasta
Taste: strong with robust traces of penicillin
Aspect and texture: compact, yellow paste with widespread bluish-green marbling. The rind is light reddish and is usually protected by tin foil
Milk: full fat, pasteurized, cow’s milk
Ripening: at least 90 days
Production Period: throughout the year
Palfuoco – Blue Cheese with chilli peppers – 200gr
Palfuoco is a blue cheese characterized by the addition of chilli pepper that causes an original encounter between the sweet cheese and the spicy of the chili pepper bringing to the palate sensations … diabolic!
Serving Suggestions: Polenta, Risotti, Pasta also on the Pizza!
Taste: Compact, rough, hard and grey in color / pinkish
Aspect and texture: White or pale yellow, buttery and melty, mottled in the development of mold, with hot red pepper. Sweet and slightly sharp because of the presence of hot pepper
Milk: full fat, pasteurised, cow’s milk
Ripening: Minimum 60-70 days
Production Period: throughout the year
