Gorgonzola PDO Sweet - 200gr
The sweet Gorgonzola Sovrano of the Palzola dairy has a characteristic creaminess that stands out in the PDO panorama. What distinguishes this product is also the ability to maintain this characteristic for several days. Moreover, its creaminess blends pleasantly with a delicate and well-melted marbling in the mass. It is matured for a period of 60 to 70 days in the old casere (cheese factories) of the property, real ageing cellars lined with terracotta tiles that maintain the humidity and temperature values unchanged. A heritage dictated by the history of the Paltrinieri family.
Foodpairings: Traditional Italian pasta and risotto dishes, but also enjoyed on its own. Accompanied by full-bodied and aged red wines. Also excellent with polenta and meat.
Taste: Intense, but more delicate than spicy Gorgonzola.
Appearance: pale straw-coloured paste, soft and yielding. Light blue-green colour. The rind is light reddish, usually protected with foil
Milk: cow's milk, whole, pasteurised

Spicy Gorgonzola PDO Extra Reserve - 200gr
Palzola's Gorgonzola au naturel is one of the most significant products of the company and one of the most sought after by cheese lovers. The cheese is matured for 70 days and during this period the blue colour gently spreads along the whole surface of the compact paste. It is more pronounced towards the centre with a typical fairly dark green colour. However, it remains creamy in pure Paltrinieri family style. This is the Gorgonzola also called spicy.
Serving suggestions: Risottos and traditional Piedmontese dishes, accompanied by full-bodied and aged red wines. To be tasted also alone or with fresh vegetables. In winter it is excellent with polenta and boiled meats.
Taste: strong, dominated by the robust notes of the penicillium.
Appearance: straw-coloured and compact paste, with rich blue-greenish marbling. The rind is a light reddish colour and is usually protected with foil.
Milk: pasteurised whole cow's milk
Maturing: 90 days minimum
Production period: annual
Palfuoco - 200gr
Palfuoco is a blue cheese characterised by the addition of chilli pepper which causes an original encounter between the sweetness of the cheese and the pungency of the chilli pepper, giving the palate ...diabolical sensations!
Serving suggestions: full-bodied, aged, red wines. Celery stalks. Bread and polenta, but also risotto and try it on pizza!
Taste: compact, rough, hard and grey/pinkish in colour
Appearance and texture: white or pale yellow, buttery, mottled in mould development, with hot red pepper. Sweet and slightly sharp due to the presence of hot chilli pepper
Milk: full-fat, pasteurised cow's milk
Maturation: minimum 60-70 days
Production period: all year round

Wine (or bottles in general) are shipped using inflatable bags and are designed to protect them throughout the journey. We remind you that all packaging can be easily reused.
