Tajarin is the fresh egg pasta par excellence in the Piedmontese tradition. Its width, halfway between Capelli d'Angelo and Tagliatelle, is what made it everyone's favourite, even King Vittorio Emanuele II was crazy about it! These Tajarin with Hazelnuts are even better for their nutty bite!
The Tonda Gentile Hazelnuts from Monferrato, combined with organic flour and organic eggs, give it a fragrance and flavour that you would never expect from a simple pasta!

If you are a lover of the slightly bitter taste of hazelnuts, just season the Tajarin with a drizzle of oil and butter. But for lunches in company, a hearty sauce of game birds or meat is a must.
