Pancetta is an Italian bacon made from pork belly meat, that is salt cured and spiced with black pepper and sometimes other spices. Pancetta is often consumed raw. The two basic types of pancetta are the arrotolata (rolled) and tesa (flat). The tesa is often used cut into cubes (cubetti di pancetta).
In Piedmont, pancetta is commonly served as a cold cut, sliced thin and eaten raw but in this case is better to eat it after cooking.
