The symbol of the Piedmontese dairy tradition, these small tomettas are obtained from whole cow’s milk, after which they are aged from 60 to 90 days.
Zafferella is a tometta with an irresistible taste given the presence of saffron added directly into the milk in the boiler. It has a distinct spicy note.
The saffron also gives the tometta a yellowish color….wow!
It’s perfect as an aperitif or as an entreè during a dinner, accompanied by a good red wine.
