Raschera has been a beloved cheese in the area of Cuneo, Piedmont since at least the 14th century, when it was recorded as a form of payment for pasture land. It gets its name exactly from these lands, mountain pastures located in the municipality of Magliano Alpi.
Raschera is normally square because of the way it was more easily placed on the mule that brought it from the pastures to the valley. A particular characteristic of this cheese is that one of its faces retains the mark of the cloth in which it was wrung out immediately after the curdling.
One of the most typical cheeses of the Piedmontese tradition, with an intense taste and slight pinch. It goes perfectly with dark beers and rich red wines, also enjoy it with some dark fruit jams or on whole-wheat bread.
