Description
Raschera is the name of a mountain pasture located in the municipality of Magliano Alpi, in the province of Cuneo. Raschera is normally square because thanks to its shape, it was more easily placed on the mule that led it from the pastures to the valley. A particular characteristic of this cheese is that one of its faces retains the mark of the cloth in which it was wrung out immediately after the curdling.
One of the most typical cheeses of the Piedmontese tradition, with an intense taste and slight pinch. It goes perfectly with dark beers and red wines.
Appearance: ivory or straw-coloured paste, compact, elastic, with widespread small eyes.
Recommended pairings: red wines, dark beers, grape jam or wholemeal bread.
