Traditional biscuits from Piedmont, Paste di Meliga are made with cornflour for a pleasant grainy feel.
The crunchy, crumbly texture makes them perfect for dipping in tea or coffee at breakfast.
They also lend themselves well as a pastry to serve at the end of a meal, especially when paired with a glass of Passito or Moscato d'Asti. Camillo Benso Conte di Cavour even liked to end his meal by pairing two Paste di Meliga with a glass of Barolo.
The Paste di Meliga recipe based on cornflour, butter, and egg yolks comes from the culinary tradition of the Cuneo valleys: theirs is an ancient recipe that has been lost in time, earning it the classification of Piedmontese Agri-food Product and Slow Food Presidium.
They were born out of necessity, using flour scraps to make polenta, at a time when the price of flour skyrocketed due to a bad harvest, but they have become essential to satisfy your palate!
