It is believed that Paste di Meliga biscuits were invented a long time ago in the Cuneo province after a poor wheat harvest: wheat flour was expensive, so some bakers tried to mix wheat flour with superfine-fine corn flour, (known as “melia” or “meliga” in Italian). The result was a cheaper but tastier biscuit, thus they kept making it. Thanks to them we can still enjoy the unique texture of paste di meliga. Try them as an after-meal treat with a glass of Barolo or a passito.
