Passito Valdernico is a white dessert wine, made from Greco grapes that undergo a very slow natural drying process. It is the rarest and most artisanal of Rovellotti's wines and is produced in very limited quantities.
The grape variety of origin is the Erbaluce, so called because the berries take on pleasant amber hues at sunrise. It is one of the most precious white grapes of Piedmont, already mentioned in 1600 in the treaty of the jeweller of the Savoy court, Giovanni Battista Croce. Instituted as DOC in 1969.
In the past, ever since Roman times, sweet wines were not particularly appreciated because only the residual sugar was sought after and the acid component was not considered (an important factor in not being cloying). It was only in the 1990s that the harvesting of grapes for sweet wines was brought forward, marking a change in trend. In fact, they reduced the number of fresh grapes in passito in order to over-ripen the grapes on the vine or in closed environments and then dry them with a very slow fermentation over a fairly long period of time.
Fermentation takes place very slowly in small wooden barrels after the harvest is completed at the end of September and the grapes are dried between February and March.
The colour is a deep straw yellow, luminous and crystalline. Its fragrance is reminiscent of hazelnut, dried chamomile flowers and dried fruit.
Balanced, sweet and slightly spicy.
Foodpairings: excellent with desserts (especially creamy desserts or dry pastries), blue cheeses, pâtés and foie gras.
