Pancetta is Italian bacon made from pork belly. It is salted, cured, and spiced with black pepper and other spices. The two basic types of Italian pancetta are the “arrotolata” (rolled) and tesa (flat). The pancetta tesa is often cut into cubes (cubetti di pancetta) and cooked to make savory dishes.
In Piedmont, pancetta is commonly served as a cold cut, sliced thinly, and eaten as is in an aperitif or with bread. It can also be enjoyed in the morning as a savory breakfast!
