Serving Suggestions: full bodied, aged, red wines, sweet and liqueur wines, rum. Hot Italian fruit chutney, red onion preserve, Vin Santo or Marsala gelatine. Celery stalks. Rye bread and polenta
Taste: Compact, rough, hard and grey in color / pinkish
Aspect and texture: White or pale yellow, buttery and melty, mottled in the development of mold, with hot red pepper. Sweet and slightly sharp because of the presence of hot pepper
Milk: full fat, pasteurised, cow’s milk
Ripening: Minimum 60-70 days
