The Colline Novaresi DOC denomination represents one of the most important wine-producing areas. It is a north-east Piedmont large district. It is extended from west to east, from Sesia river (which origins to Rosa mountain) to Ticino river (which comes from Gottardo mountain).
The harvest takes place manually in boxes in the second part of September, the red winemaking process is traditional. The process of vinification ends with the wine maturation in stainless steel barrels for 6 months.
The colour of the wine is purple with good intensity, The bouquet has persistent yet refined notes of spices, in particular, black pepper and notes of red fruits. In the mouth is sapido, well balanced with a delicate mineral note, nervous with silky tannins and a long and characteristic finish.
Foodpairing: cured meats, red meats, pork and aged cheese.
