Enrico Serafino's Picotener is a rare wine because it is produced in very limited quantities and is characterised by low vegetative vigour. That is, within the same Nebbiolo vineyard, which has been cultivated in Piedmont since the 14th century, one can find areas where the soil has a different composition and structure due to different climatic conditions and different degrees of exposure to the sun. These structural differences give rise to restricted sub-varieties of Nebbiolo, known as biotypes.
Our Enrico Serafino has revived a now-forgotten biotype in order to bring to life an authentic expression indigenous to Piedmont: that is why it is called "The Forgotten Nebbiolo". Having a Picotener in your cellar will make your friends die of envy!
Its red colour is a refined ruby nuance that reveals its full-bodied, aromatic flavour and pulpy texture. Its initial touch on the palate is delicate but is immediately followed by an increasingly consistent sensation that ends with long and savoury persistence.
The harvest is done manually in the crate, as is the careful selection of the bunches. Destemming is followed by alcoholic fermentation in stainless steel at a controlled temperature with part of the grapes whole and partly subjected to soft crushing. Maceration on the skins takes place for more than 18 days. The wine matures in oak barrels for a period of one year.
What to pair it with? It lends itself to medium and long-aged cheeses such as Castelmagno or Bettelmatt. Or red meats and first courses prepared with porcini mushrooms.
