The Testùn is the name that in the Piedmontese Occitan valleys is given to the mixed herd of sheep and goats, with which this toma milk is produced, and where sheep milk predominates quantitatively. Testùn, like Bra, is also consumed slightly seasoned, but generally starts with medium-long seasonings, which can reach the year.
The taste of this particular cheese is intense, spicy, dry with notes of sheep’s and goat’s milk. To be tasted with honey, mustard and rye bread. Yummi!
