Testùn is the name that in Piedmontese Occitan valleys is given to the mixed herd of sheep and goats. The mixed milk taken from this herd then produces a delicious mountain cheese. Usually sheeps milk dominates the mix but this unique cheese is primarily a goat testùn. The cheese is slightly aged, from a few months (3 minimum) to a year.
The taste of this particular cheese is intense, spicy, dry with notes of sheep's and goat's milk.
You can enjoy the full Piedmontese experience by pairing this cheese with a glass of rich red wines, a drizzle chestnut honey, or spicy fruit mustard and with rye bread.
