It’s Easter time!
To celebrate this holy festivity, here comes an artisanal cake, similar to the Panettone, but specially created for Easter. It’s called Colomba (“Dove” in English).
It was created in the 1930s by Dino Villani, Head of Advertising at Motta – a confectionary company in Milan. However, there are legends that trace this Easter cake back to the Longobard era, at the time of the Lombard king Alboino, who during the siege of Pavia (mid-sixth century) saw himself offering, as a sign of peace, a sweet cake in the shape of a dove, hence the Colomba.
Despite the legends, today the Easter Colomba spread on the tables of all Italians, and even beyond the borders of Italy. The original dough, made with flour, butter, eggs, sugar and candied orange peel, with a rich almond glaze, has subsequently taken on various forms and variations.
Our producer Brusa re-interprets the original recipe by adding delicious black cherries to this handmade, naturally leavened for 72 hours Easter cake!
