This is the fine Fioretto di Beura flour is obtained by grinding the maize grain. It has a delicate smell reminiscent of wet straw and a sweet taste. It has a very fine grain and gives a rather compact dough with a crumbly consistency that can be partially resolved with more hydration and a longer resting time (also in the fridge).
It is a chameleon ingredient. Suitable for short and soft doughs such as waffles, pancakes and creamy desserts, but also for pizza and pies. It is recommended to mix it with other flours or starches with a percentage of up to 50%.
Ideal for those with gluten intolerance or allergy.
