The filzetta is a pork sausage seasoned medium-long to be consumed raw. It’s a medium-fine grind, pasta with light pink; cylindrical regular in shape, smooth texture and weighing between 0.5 and 1 kg. The salami Filzetta differs from other sausages for the type of casing. Thanks to the high concentration of lean and valuable, salami Filzetta is considered the king of sausages.
The filzetta is best consumed as an aperitif or as an entrèe together with some bread and matured cheese like Bettelmatt or Antigorio.
