Fidighina d'la duja is a pork salami, which also includes liver and is preserved in lard. The result is a smoother salame with a taste different from classic variations.
The word "duja" in local dialect means "vase, pot, or jar". As a matter of fact, the name of the product derives from the terracotta jar used to preserve the salami in the lard casing. The unusual preservation method of salam d'la duja has developed in the very wet plains of eastern Piemonte, where drying meat was not possible because of the humidity in the air and the climatic conditions, unfortunately, favors the growth of molds.

The salame is seasoned with salt, pepper, garlic, additional spices, and red wine. The result is a bit softer than classical salami. When sliced, you can clearly distinguish the dark red lean part and the white fat part.
Fidighina d'la duja can be eaten raw, cut into rather thick slices,  it is also great eaten with some bread. Traditionally, it is one of the main ingredients of paniscia, the characteristic risotto of the areas of Vercelli and Novara.
