Erbaluce is a traditional vine of the Canavese area, in the north-west of Piedmont.
The Canavese vineyards were already famous at Romans times, but it is in the 1606 that Giovanni Battista Croce, the jeweler of Duke Carlo Emanuele I, wrote about a white local grape, the “Erbaluce”. In the nineteenth century Erbaluce became more and more famous and appreciated in Italy and abroad.
The Canavese terroir is perfect for Erbaluce grapes and the results is not one but three noble wines: the dry still white one, the sparkling one and the passito. The three of them are recognized for their value with the Denomination of Controlled and Guaranteed Origin.
Ferrando turns Erbaluce grapes, hand harvested in September, into this sparkling wine, Erbaluce di Caluso DOCG “La Torrazza”. The grapes are processed following the Metodo Classico and the sparkling wine pas dosè is aged in the bottle for at least 36 months. The result is a bright straw yellow wine with a fine yet persistent perlage, characterized by hawthorn aroma and a toasted finish.
