Don't be fooled by its name, Dolcetto is not a sweet wine but owes its name to the dense and sweetish pulp of its grapes and to its meaning in the Piedmontese dialect of "a little bump".
Indeed, it is said to be the wine that best expresses the concept of vinosity: fresh and fragrant with a slight acidity.
As far back as 1974 Dolcetto Dogliani was awarded DOC status, but it was only in 2005 that DOCG status was also established, thanks to the protection and promotion work of the Bottega del Dogliani: a consortium that brings together the producers of this excellence, of which Cà Mamai is a member.
It is a difficult vine to cultivate, due to its high sensitivity to extreme climatic conditions, and even more so to vinify due to the large quantities of tannins. However, Cristina's passion and dedication have not let these obstacles get her down: it is thanks to her careful cultivation using the Guyot system and manual pruning, traditional vinification and ageing in steel barrels, that we can taste the right calibre of aroma and flavour that this wine has to offer.
It is ruby red with violet reflections, an intense bouquet of flowers and fresh fruit such as blackberry and cherry. Its flavour is harmonious and dry, with a finely almondy and persistent aftertaste.
As it does not have a strong alcoholic charge, it is excellent served throughout a meal. Try it with Pappardelle dressed with game ragout or in combination with Raschera.
