The Colline Novaresi DOC denomination represents one of the most important wine production areas. It is a large district in north-eastern Piedmont. It extends from the Sesia river (which originates from Mount Rosa) to the Ticino river (which originates from Mount Gottardo).
To make this Vespolina Novarina the grapes are harvested manually in the second half of September, the red wine-making process is traditional and maceration takes place for 7 days on the skins. Malolactic fermentation takes place spontaneously during the 6-month maturation in stainless steel tanks. The vinification process ends with the wine maturing in stainless steel barrels for 6 months.
Novarina is purple-red, the bouquet is fruit-forward, with refined notes of spices, in particular, black pepper. In the mouth, it is savoury, well balanced with a delicate mineral note, silky tannins, and a long and characteristic finish.
This Colline Novaresi DOC Vespolina pairs well with cured meats, red meats, pork, and mature cheeses.
