In this Colline Novaresi DOC Bianco Il Criccone, Rovellotti encapsulates all the richness of one of Piedmont's historic grape varieties in this bottle- Erbaluce.
The first record of this vine dates back to 1606, when the jeweler of Charles Emmanuel II, Giovanni Battista Croce, mentioned it in his book "Della eccellenza e diversità dei vini che della Montagna di Torino si fanno" (On the excellence and diversity of the wines made in the mountains of Turin), writing "Erbalus is a white grape, so-called as alba luce (dawn light) because it shines with white light: it has round, dense and abundant grains, it has a hard shell or peel: when ripe, it becomes roasted and coloured and remains on the plant for a long time".
Harvest occurs at the end of September, pressing and racking after about 12 hours resting on the skins, it then goes through a slow fermentation done at a controlled temperature of 20°C in stainless steel. The Colline Novaresi DOC Bianco is then bottled in January.
Il Criccone is pleasant right from its colour, whose straw-yellow, brilliant colour is reminiscent of the sun's rays penetrating the vines. A complex bouquet that leaves you speechless, with a subtle hint of hay, field grasses, basil, hawthorn, plums, and exotic fruit. A dry, refined and elegant body, savoury, balanced, and intense, with a persistent flavour.
We suggest enjoying it with marinated fish, cured meats, grilled veal, and chicken. It also is excellent on its own for an aperitivo.
