This salame from Salumificio Zanardi is dedicated to grandfather Carletto: a simple man who loved the simplicity of life. He worked as a farmer and was delighted in preparing classic salami to share with his family.

Giovanni Piero still remembers the goodness of that salami, so he decided to recreate it with Carletto.  While its preparation is really as simple as it was made by his grandfather, the ingredients chosen are nobler than the original recipe. In fact, culatello is selected for the lean part and, for the more fatty component, the corpulent cut of the pig's throat. The curing is done with red wine, sea salt, and pepper and the salami is matured for 30 days. In fact, its softness and the scent that is released with each slice are due to this short seasoning.

I know that for a gourmet like you there is no need to say it, but it is advisable to eat it immediately!
