Boca DOC is a Nebbiolo-based (85%) wine with a touch of Vespolina, which gives it great spice and structure. This wine requires full maturity and is treated in casks for 3 to 4 years and then stored for decades. The mineral composition of the porphyry soil together with the characteristic structures of the Nebbiolo grapes allow "Boca" to become a full and expressive wine. Its flavour is reminiscent of ripe berries, violets, tobacco, and dried herbs with balsamic notes. On the mouth, it develops a silky, and playful elegance, with a slightly bitter final note.
The wine goes through a long fermentation with the skins (30 days) in open wooden barrels with natural yeast. The skins are pushed down 1-2 times a day by hand. After pressing, the wine is matured for 3 years in large Slavonian oak barrels. Malolactic fermentation takes place naturally in spring. After 3 years the wine goes through a light filtration and is bottled.
This elegant Boca DOC wine pairs wonderfully with traditional alpine food such as salami, stuffed meat, Tapulone (typical dish of our region based on minced donkey), polenta, and of course Gorgonzola.

It is our priority to pack and ship the products securely. All the different types of cheese are vacuum-sealed and we use dry ice and thermal bags.
Wine (or bottles in general) are shipped using inflatable bags and are designed to protect them throughout the journey. We remind you that all packaging can be easily reused.
