BOCA DOC is made from Nebbiolo grapes (85%) and Vespolina, which gives it great spice and structure. This wine requires full maturity and is treated in casks for 3 to 4 years and then stored for decades. The mineral composition of the porphyry soil together with the characteristic structures of the Nebbiolo grapes allow "Boca" to become a full and expressive wine. Its flavour is reminiscent of ripe berries, violets, tobacco and dried herbs with notes of balsam and citrus fruits. In the mouth it develops a silky, charming and playful power and elegance, with a slightly noble and bitter final note. The vast complexity of the taste allows you to discover new facets.

Intense ruby red colour with purple highlights. It offers a bouquet of violets and berries with delicate balsamic and tobacco sensations. It gives a long and persistent finish.

Vinification: long fermentation with the skins (30 days) in open steel and wooden barrels with natural yeast. The skins are pressed 1-2 times a day by hand. After pressing, the wine is matured for 3 years in large Slavonian oak barrels. Malolactic fermentation takes place naturally in spring after the harvest in the wooden barrels. Bottling after 3 years with very soft filtration.

Food pairing: traditional alpine food such as cooked salami, stuffed meat, Tapulone (typical dish of our region based on minced donkey), polenta and of course Gorgonzola.

It is our priority to pack and ship the products securely. All the different types of cheese are vacuum-sealed and we use dry ice and thermal bags.

Wine (or bottles in general) are shipped using inflatable bags and are designed to protect them throughout the journey. We remind you that all packaging can be easily reused.
