Black garlic pearls are a product with a caviar-like consistency. It is ideal for garnishing cold dishes for your aperitif with friends. When used as a condiment for hot fish dishes it gives a refined and delicate touch: the pearls resist intact the heat of the dish.
This is the latest creation by Alice and Guglielmo of Umami to enjoy garlic in an innovative and elegant way. The two young biologists, experts in food processing, had already explored the limits of natural fermentation to create black garlic, now they are the first Italian company to have created a new horizon for tasting garlic.
Its texture is soft, it releases an enveloping scent to the nose and gives the palate a delicate, slightly sweetish flavour with balsamic notes.
Classic white garlic is fermented at controlled temperature and humidity until its cloves turn black, its texture becomes softer and its flavour more delicate and digestible. In fact, the real magic of this process is the loss of allicin, which makes white garlic a real serial killer weapon for your breath.

It is our priority to pack and ship the products securely. All the different types of cheese are vacuum-sealed and we use dry ice and thermal bags.
Wine (or bottles in general) are shipped using inflatable bags and are designed to protect them throughout the journey. We remind you that all packaging can be easily reused.
