It is a jam obtained from a particular variety of bitter oranges. Through a special process (“English” method), most of the pulp is removed from the fruit, keeping only the juice and the peel. It creates a jam with a gelatinous consistency and a bitterish taste, with delicious candied flaws. In addition to breakfast and use in pastry, this jam goes well with aged cheeses and red meat.
