Zero 140 Riserva Pas Dosé by Enrico Serafino is the ultimate expression of the longevity of the Alta Langa Metodo Classico. The first of its kind with extreme refinement. 13 years of waiting, more than 110,000 uninterrupted hours of processing from the harvest to refinement on the lees and disgorgement. The extraordinary processing gives this wine unique characteristics and unleashes the essence of Pinot Noir and Chardonnay to the fullest.

The colour on the bottle changes at each vintage according to the "Theory of Colours and Planets": the 2008 Red, the fourth vintage produced, is dedicated to the planet Mars.
Enrico Serafino was one of the first historic houses to use underground tunnels to collect Classical Method Cuvées. Their artisanal soul has been well balanced over time by their innovative spirit and, with the Zero 140 Riserva Pas Dosé, they have admirably paved the way to take the potential of Alta Langa Millesimato to its limits.

Its scents are of candied fruit, honey, toasted hazelnuts, vanilla and bread crust. On the palate, it gives an almost creamy and full-bodied sensation, intense and with a pleasant acidity followed by a mineral finish. Persistent and fresh perlage.

The grapes are hand-selected on the vibrating table and pressed in an inert environment with a yield in free-run must of 45%. The entire process takes place without the use of augers in order to treat the grapes as delicately as possible. The must is fermented in stainless steel tanks at a controlled temperature and kept for 6 months on the lees with bâtonnage. Foaming is carried out according to the traditional method of bottle fermentation, with aging on the lees for 140 months, avoiding any dosage and late disgorgement.

What to pair it with? It is the ideal wine to surprise your family and friends during your aperitifs in company. Its fine perlage enhances the delicate flavour of fish and foie gras. But this delicacy does not lose its tenor when paired as a wine for complex and full-bodied first courses.
