Elia Rossi produces this variety of honey in the mountains around the Lake Maggiore.
A highly appreciated honey thanks to its fine aroma and its peculiarity to stay liquid much longer than other honeys. It is also an excellent sweetener because it’s very rich in fructose.
Acacia honey has a liquid consistency. The colour is pale yellow – clear and almost transparent.
The odour is delicate and fruity. The flavour is very sweet with traces of vanilla.
Foodpairing: It’s ideal to have it with Erborinato cheeses such as Erborinato San Carlone or even Gorgonzola. Given the sweet flavour of the honey, it combines well with strong cheeses. It’s also used to make pies or cookies.
