An age-old tradition in Northern Piedmont is the processing of meat to make salami, sausages and cold cuts – and today, they have become some of the most appreciated products in the area. Traditional cold cuts are salami, pancetta, bresaola but also lard and ham. Well-known are the salami from the Novara local cuisine such as Salam d’la Duja and the Fidighin.
To complement these delectable salamis, the locally produced wines are perfect: full-bodied reds like Ghemme Docg and Nebbiolo from the Novara hills, the Prünent from the Ossola valleys or the Vespolina from Boca.
