A bit of history
Umami Black Garlic has been created between the Langhe and Roero, in a UNESCO World Heritage area known throughout the world for its food and wine tradition.
Refinement and an eye for tradition have led two young men to rediscover garlic which, thanks to a long process of natural maturation and fermentation, is transformed into the special black garlic, which can be used in a variety of preparations, from creams to salt. The same excellent processing has also been used for the shallot, for a smooth and balsamic flavour with a pleasant acidic note.
